Themed Menu Ideas


I came up with an idea on another group. Complete menu plans based on a central theme or cuisine.

Here is the challenge. Create a complete meal menu for a family dinner. Desert is optional.

Every menu must include recipes for every dish in it. Links can be given with the recipes.

Credit to any site or creator of the recipe if not your own creation. Please do not use copyrighted materials.

The best recipes are ones you create sometimes.

I will be adding a menu or two every now and then. Any site member is free to add to this post and listing.

I wanted to get the menu idea started. Some recipes might already have been posted. It is alright to repeat a recipe which has already been posted on this site if it fits within your full menu plan.

Fruit and Vegetable Salad with Lime Juice Dressing

Healthy vegetarian sandwiches

Oven Roasted Garlic Potatoes

Chocolate for Dipping (candies, dried fruit, strawberries, cookies,
pretzels, cakes) Use already made or make your own cookies and cakes.

Beverage ideas, tea, coffee, fruit juices, soymilk

Fruit and Vegetable Salad with Lime Juice Dressing


Fruit and Vegetable Salad

Grated carrot, broccoli, chopped red cabbage (I used a package of
broccoli shaw mix from the market)

1 or 2 apples chopped

1 chopped peeled cucumber

Lettuce about 1 or 2 heads of lettuce torn up in pieces

Dried cranberries about 2 handfuls

Sunflower seeds shelled and salted about 1 or 2 handful

Mix together after washing vegetables and fruit prior to chopping
cutting, grating.
Exception: Do not wash dried cranberries or sunflower seeds.

Lime Juice Dressing

Fresh squeezed lime juice about 1 to 5 limes depending on size of
salad and size of limes.

Onion powder about 1/2 to 1 teaspoon

Fresh ground black pepper

Honey to sweeten lime juice (Use an amount to suit your own tastes)

Mix all dressing ingredients until fully blended.

Mix the dressing with the tossed salad.

Completely coating the apples with the dressing.

Lime juice keeps apples from turning brown.

Chill salad with dressing in refrigerator for about 30 minutes to 1
hour before serving allowing the flavors to blend.

Healthy vegetarian sandwiches

Ingredients

Whole grain bread or favorite bread of choice

eggplant unpeeled slices work best (I use four to six very small
variety eggplant or one large eggplant)

one red bell pepper

one portebello mushroom or several chopped smaller mushrooms

garlic cloves about 4 to 6 or garlic powder to taste preference

onion or onion powder to taste preference

leafy lettuce

butter for bread if not using condiments

cooking oil

optional additions to sandwich filling:

cheeses, avocado, spouts, spinach,tomatoes,

condiments such as mayonnaise, mustards, other sauces or salad
dressings to personal tastes and preferences

Saute cut and washed eggplant, mushrooms, chopped garlic, onions, and
red bell pepper, in cooking oil until all vegetables are tender and
cooked.

Butter bread or spread with your favorite condiments see optional list
for suggestions below main recipe.

Assemble sandwich with lettuce and other optional additions to your
preferences, slice sandwich, eat and enjoy.

Recipe will make about two very stuffed sandwiches or up to 4
sandwiches depending on how much you stuff into the bread or the size
of the bread and vegetables can yield a different amount in the final
sandwich amount.

Oven Roasted Garlic Potatoes

Ingredients

Potatoes red skinned, russet, or other variety about 2 to 3 per
person if small or 1 large.

Garlic powder or fresh chopped garlic

Seasoned salt without MSG

Vegetable oil


Wash and cut potatoes into cubes or cut like fries or wedges.

Pour oil enough to coat a cookie sheet or baking pan

Arrange the potatoes on the pan or cookie sheet

Sprinkle the potatoes with garlic powder and seasoned salt

If using fresh garlic, mince the garlic and mix with the potatoes.


Place in oven at 400 degrees cook about 15 to 30 minutes or until the
potatoes are crispy and browning and soft in the middle when poked
with a fork. Cooking time will vary so check the potatoes often

Chocolate for Dipping

Melt semi sweet chocolate chips in a pan or double broiler. Once the
chocolate chips are melted, you can use the melted chocolate for
dipping other foods such as fruit, pretzels, cookies, nuts, candies, cake.

When finished dipping the other foods, set the dipped food item on a
piece of waxed paper to harden the chocolate. Item dipped can be
refrigerated to speed up the hardening process or to chill the item.

Melted chocolate will also work over ice cream for a chocolate shelled
treat.

Southwest Menu #1

Southwest Turkey Enchilada Casserole

1 pound ground turkey

1 can of black olives (break up olives after draining or cut into
smaller pieces)

12 corn or 8 to 10 flour tortillas depending on size or 1 bag of
tortilla chips

1 small can of green chili's

1 can or jar enchilada sauce green or red if not available use any jar
of salsa

1 pound grated cheese (monterrey jack, cheddar, cotija, queso fresa,
or other variety of cheese use what is available in your local market

1/2 small onion diced

Diced green onions

Sour cream

Chopped cilantro --- can be omitted if not available

Vegetable Oil or non stick cooking spray


Cook and brown ground turkey crumbling it as you cook it in a skillet
with some vegetable oil or cooking spray to prevent sticking to pan.

Add chopped onions and green chili's to the turkey cook until onions
look transparent.

Add drained chopped or broken black olives to the turkey

Turn off heat and set aside while you prepare a casserole or baking
dish.

Oil or spray the casserole or baking dish to prevent sticking.

Pour a bit of the enchilada sauce in the bottom of the dish

Add broken tortillas or tortilla chips to the dish

Mix in turkey mixture, cheese, and the rest of the enchilada sauce,
some cilantro, some green onions ---reserve some of the green onions
and cilantro for a garnish

Bake in oven set at 350 for about 20 to 30 minutes or until the cheese
is melted.

Cooking time may vary.

Garnish with sour cream, green onions, cilantro

Black Bean Corn Salad

1 can of black beans ---rinsed and drained

1 can of corn ---rinsed and drained

1/2 to 1 jar of salsa

1 or 2 chopped tomatoes

Salad greens ---lettuces, spinach, watercress can use salad in the bag
or a variety of various salad greens

Mix all ingredients in a large salad bowl chill before serving or
while you are making the casserole.
Mix again before serving the salad.

Cinnamon Sugar Tortilla Triangles

1 flour tortilla per person---more if making a basket full

Vegetable oil

Cinnamon ---I shake the cinnamon into a bunch of sugar.

Sugar ---I pour some sugar into a bag

Basically enough cinnamon and sugar to coat the tortilla triangles

1 bag to shake cooked tortilla triangles into cinnamon / sugar mixture


Cut tortillas into triangles about 4 to 8 triangles per tortilla

Heat oil until hot enough to fry tortilla triangles

Add tortilla triangles a few at a time reserving some to cook---don't
put all of them in at once they will stick together if you do.

You want to watch these carefully turning them to get them lightly
browned but not burnt.

Set aside the cooked tortillas while you finish cooking all of them.

Heat may need adjusting during cooking as oil can get too hot.

Place tortilla pieces in bag with cinnamon and sugar.

Shake well to coat the tortillas

Fresh fruit and yogurt parfaits

Any variety of fresh fruits either mixed or single fruit washed and
cut, seeds removed, cores removed, peelings removed if necessary

1 large container of vanilla yogurt or other flavor of yogurt to suit
your tastes

granola, crushed cookies, cake pieces, candies are optional

Spoon fruit and yogurt and optional ingredients into dessert cups,
goblets, cocktail glasses layering each ingredient until the dish is
full----can also be layered into one large serving dish
