Pasta with Chicken and Vegetables


I was wondering what to make for lunch. I had some frozen boneless skinless chicken thighs, some vegetables, some pasta and my
imagination. Ok, I got a bit creative. My family has called me the kitchen witch or a mad scientist in the kitchen.

Forget defrosting the chicken, former roommate took back his microwave after he gave it to me. So, I am currently without a microwave for awhile.

Ingredients needed

6 boneless skinless chicken thighs or any boneless skinless chicken
can used.

2 very large carrots cut up or more smaller carrots

1 large mexican or zucchini squash cut up into pieces or more smaller
ones

1 small onion chopped

5 cloves of garlic chopped or minced

10 or more sundried tomatoes in olive oil

1 pinch of dried oregano about half of a teaspoon crushed up with
your fingers

2 pinches of dried basil about a teaspoon crushed with your fingers

1 pinch of dried parsley crushed with your fingers

Salt and Pepper to taste

Water

Olive oil from sundried tomatoes

Cooked pasta any type.

About 2 tablespoons of flour to thicken the sauce.

Instructions for preparing the food

Take frozen chicken thighs out of package rinse and add to a large
skillet or pan.

Add enough water to cover chicken thighs cook on medium high to high
until chicken is starting to change color on the outside.

Approximately 15 to 20 minutes depending on temperature of you
skillet.

While chicken is cooking in the water cut and chop the vegetables
with a the exception of the sundried tomatoes (they can be put into
the skillet as they come from the jar).

Add chopped vegetables and sundried tomatoes and a bit of the olive
oil from the sundried tomatoes to the skillet with the chicken.

Cook until chicken and vegetables are very tender and most of the
water is almost gone to about a half a cup to a cup in the skillet.

The water will turn into a broth and be part of the sauce for the
pasta.

When chicken and vegetables are almost cooked bring another pot with
water, a bit of salt and about a tablespoon of oil to a full rolling
boil add pasta and cook until pasta is done.

I like to stir the pasta a bit to make sure it is separated and cooks
evenly in the water.

When pasta is cooked drain but reserve a about a cup of the hot water
inside the pot with the pasta.

Add the chicken and vegetables to the pasta and reserved water.

Add the sauce that forms from the chicken and vegetables too except
for some to make a thicking with the flour.

In the skillet heat the flour and slowly add some of the liquid from
the chicken and vegetable sauce.

Heat for about 2 to 3 minutes while stirring the lumps out of the
flour mixture.

Add flour mixture back to the pasta, chicken and vegetables stir
while heating for about a 1 minute or 2.

Arrange the pasta, chicken and vegetables on a plate sauce might just
coat the pasta but the flavor will be in the food it is a very light
sauce or blends in and additional water could be added if desired or
needed.

Optional garnishments could be salt, pepper, grated cheese, additional herbs.
